The absorption method is my favourite way to cook rice.
It is reliable, simple and easy and it gives good results every time.
What type of saucepan to use The best saucepan to use is one with a heavy base and preferably a see through lid.
A glass lid will let you to see what is going on without lifting the lid.
Any well-fitting lid will be fine as long as you don't lift the lid when the rice is sitting.
The saucepan should be of a medium size, around 6 to 8 inches in diameter for best results.
Get the proportions right It is very important to get the proportion of rice to water right for the absorption method.
I find the best proportion to use is 1 cup of rice to slightly less than 2 cups of water.
Whatever cup you use to measure the rice, make sure you use the same sized cup to measure the water.
I add one cup of water, then add the second cup and make that about one quarter of an inch down from the top.
This gives the best results.
Method Wash one cup of rice and put it in your saucepan.
Measure slightly less than 2 cups of cold water and add it to the saucepan with a pinch of salt.
Bring to a fast boil.
Once the water is boiling rapidly, turn the heat down to a slow simmer.
Simmer the rice for about 5 minutes.
Then turn the heat completely off.
Let the rice sit in the pan for about 15 to 20 minutes.
It should absorb the water completely in this time and be ready to serve.
It will take slightly less time to absorb the water if you have a saucepan with a heavy bottom.
Fluff the rice with a fork before serving.
