Eggs with Avocado and Salsa

Ingredients
€ Eggs - 4
€ Almonds -cup sliced
€ Salsa - 4 Tbsps.
€ Avocado -sliced
Method
Beat the eggs and pour it over a non-stick skillet placed on medium high heat, cook the eggs for one minute and then reduce the heat to medium low. The eggs take about two to four minutes to cook, and then top the eggs with avocado, almonds and salsa.
Oatmeal with €No OATS€
Preparation Time: 15 minutes
Serves: 2
Ingredients
€ Fresh Berries - 1 handful (optional)
€ Walnuts -cup (any nuts can be used)
€ Pecans -cup
€ Eggs - 3
€ Banana - 1
€ Ground Cinnamon -to 1 Tsp.
€ Ground Flax Seeds - 2 Tbsp.
€ Ground Ginger -Tsp.
€ Ground Nutmeg - a dash
€ Almond Butter - 1 Tbsp.
€ Pumpkin Seeds - 2 Tbsp.
€ Unsweetened Almond Milk -cup
Method
Add all the spices and nuts to the food processor and make it into a coarse mixture by using the pulse mode and set aside the mixture. Whisk in the almond milk and eggs together to create a mixture which has the consistency of loose custard or until it thickens. Now, add the almond butter and mashed butter to the mixture and completely blend them into it. Add the coarse nut mixture to above and mix them, now take a sauce pan and pour the mixture, warm the mixture until the eggs are cooked and till you get the desired consistency. Add more almond milk if necessary and top it off with the berries.
Lunch
Light Vegetable Soup
Preparation Time: 30 minutes
Serves: 2
Ingredients
€ Zucchini - 2 medium sized, thinly sliced
€ Carrots - 2 Large, thinly sliced
€ Yellow Onion -diced
€ Thyme - 2 springs ortsp. dried
€ Parsley - 4 springs, chopped
€ Coconut Oil - 2 Tbsp.
€ Ground Pepper - to taste
€ Sea Salt - to taste
€ Vegetable Broth - 4 cups
Method
Add the coconut oil to a 4 quart sauce pan; now cook the onions until they are translucent. Add all the vegetables and herbs and cook it until they are tender over low heat. Now add the vegetable stock and bring it to a boil by increasing the heat. Turn down the heat and let the soup cook for about 15 - 20 minutes. The soup can be served like that or pureed with small chunks and served hot.
